Bisson’s dry sparkler is finely balanced, with green apple and floral aromas dominating the complex, heady mix. Chiseled mineral acidity demands a thoughtful pairing with light salads, youthful cheeses and salty, smoked fish. If you enjoy Prosecco, this is essentially what this bottle is as it’s made from the Prosecco grape, Glera. However, this is a bone dry rendition of the sparkling wine and very unique for that matter. Sealed with a crown cap and in 2016 this practice no longer allowed for the wine to be labeled as Prosecco all the while listing the grape Glera.

Bisson wines were born in early 1978 when Pierluigi Lugano, a master winemaker and accomplished sommelier, aware of the potential he sensed hidden in the tart wines of Ligurian farmers, decided to embark on the adventure of valorizing the grapes of the Eastern Ligurian Riviera. Thus, together with his wife Wally Bisson, he opened the Bottega del Vino in Chiavari, thus founding the Bisson winery.
He then began purchasing small batches of grapes from local farmers and making wine in his own cellar. Applying modern winemaking techniques, he carried out numerous experiments to understand how to treat local grapes.
The excellent results obtained have allowed us to “revive” those native Ligurian wines that had practically disappeared, such as “Bianchetta Genovese” and “Cimixià”, and to create new intuitions such as “Musaico”, a red wine with a strong personality.
After several years spent making wine from purchased grapes, aware of the fact that wine is born “in the vineyard”, he decided to plant his own vineyards, in order to achieve full control of the quality process of his wines.
Cultivation with “strict limitation of pesticides” is the latest challenge that is being carried forward, with extreme conviction, in its vineyards to guarantee quality and authenticity.
