- Location and Origins: Lagavulin is situated in a small, picturesque bay near the historic ruins of Dunyvaig Castle. While official records date its founding to 1816 by John Johnston, evidence suggests illicit distillation may have occurred on the site as early as 1742.
- Distinctive Flavor Profile: The characteristic smoky and peaty notes of Lagavulin whiskies are heavily influenced by the distillery’s surroundings. The water source, Lochan Sholum, flows through peat-laden hillsides before reaching the distillery, infusing the whisky with its unique character. The barley used is also dried over peat fires, further enhancing the smoky flavor, says Moving Spirits.
- Production Process: Lagavulin is known for its notably slow distillation process, which is among the longest on Islay. The distillery utilizes a double distillation method with pear-shaped pot stills.
